Ingredients for 4 persons:

  • 2 sea bass
  • Fresh oregano, sage and tarragon
  • 1 lemon
  • 2 onions
  • 1 red bell pepper
  • 1 yellow bell pepper
  • Handful of cherry tomatoes
  • Fresh flat-leaf parsley
  • Sea salt and black pepper to taste
  • Olive oil
  • 500 grams of white asparagus
  • 500 grams of green asparagus

Supplies:

  • Cutting board
  • Chef's knife
  • The Windmill Skillet

Preparation time: 45 minutes

Steps:

  1. Light the campfire set/BBQ with a nice tower of logs and get the fire going.

  2. Clean the sea bass, cut it in half, and stuff it with fresh oregano, sage, tarragon, and lemon slices. Slice the onions and bell peppers into rings.

  3. Place a layer of onions, bell pepper, and lemon on the bottom of the Dutch oven. Top with the stuffed sea bass and add the cherry tomatoes and the remaining onions and bell pepper. Sprinkle with pepper and fresh flat-leaf parsley.

  4. Place the Dutch oven in the heat and let it cook for about 15 minutes.

  5. Cut the white asparagus into pieces and mix with the green asparagus tips. Season with sea salt and black pepper.

  6. Heat some olive oil in the skillet and fry the asparagus on the stove for about 5 minutes until crispy.

  7. Remove the sea bass from the Dutch oven once it's cooked through. Let it rest briefly.

  8. Serve the sea bass with crispy asparagus and, if desired, a creamy mashed potato. Perfect for a relaxing Saturday night!
