Ingredients :
1.2 kg wild boar tenderloin
500 grams of mushrooms
3 onions
5 cloves of garlic
3 carrots
2 parsnips
4 bay leaves
15 grams of thyme
15 grams of rosemary
1/2 liter stock (preferably game stock)
1 bottle of dark beer
Blackberries
Flower
Oil and butter
Salt and pepper
Preparation method
Cut the wild boar into 4x4 cm cubes and sprinkle with salt and pepper. In the meantime, place a DO on the coals and heat the oil with the butter.
Coat the diced wild boar in flour and brown in the DO.
Remove the fried meat from the DO, and fry the chopped onion, garlic, mushrooms and carrot, then deglaze it with the beer.
Let it boil for a while and then add the fried meat.
Pour in the warm stock with the thyme and rosemary and let the stew simmer for about 2.5 hours.
In the meantime, peel the parsnip and cut it into cubes.
Add this along with the blackberries to the stew and let it simmer for another hour, stirring occasionally. The parsnips will thicken the stew.
To give it a personal touch you can add hazelnuts or cranberries
Check the seasoning and add salt and pepper if desired.
Serving tip: fried sweet potato fries!
