Ingredients for 4 persons:
- 500 grams of ground beef
- 1 egg
- 60 grams of breadcrumbs
- 40 grams Parmesan cheese, grated
- Half a bunch of fresh chives, finely chopped (extra for garnish)
- Half a bunch of fresh parsley, finely chopped
- Half a bunch of fresh oregano, finely chopped
- 2 cloves of garlic, finely chopped
- 3 tablespoons favorite pork rub
- 250 ml BBQ sauce of your choice (cherry)
- 80 ml cream, unsweetened
- 10 slices of bacon, halved

Finely chop all the fresh herbs and garlic. Reserve some chopped chives for garnish.
In a large bowl, combine the ground beef with the egg, breadcrumbs, Parmesan cheese, chives, parsley, oregano, garlic, pork rub, and unsweetened cream. Mix well. 
Forming balls:
Roll the minced meat mixture into balls of about 35 grams each.
Cut the bacon slices in half and wrap each ball in half a slice of bacon.

Fire preparation:
Build a stable wood fire and position a grill rack at a safe height above the flames for indirect heat. Use cherry wood for added flavor.
(Or set your grill for indirect grilling at a temperature of about 110 degrees Celsius.)
Add the chunk of cherry smoke wood to give an extra smoky flavor while smoking.
Smoking:
Place the moinkballs on the grill and smoke them until they reach a core temperature of approximately 60 degrees Celsius.
BBQ Sauce and Yarn:
Remove the skillet and pour half of the Cherry BBQ Sauce onto the bottom.
Add the smoked meatballs to the skillet and pour the remaining BBQ sauce over them.
Use a brush to coat the meatballs well with the sauce 
Yarn to perfection:
Place the skillet with the meatballs back on the heat and continue cooking until they reach a core temperature of 70 degrees Celsius. 
Serve:
- Remove the moinkballs from the heat and garnish them with some finely chopped chives.

Sauce 1: Creamy Blue Cheese Dip
Ingredients:
- 100 grams blue cheese, crumbled
- 100 ml sour cream
- 50 ml mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, finely chopped
- Salt and black pepper to taste
- A pinch of cayenne pepper (optional)
Preparation method:
- In a bowl, mix the blue cheese with the sour cream and mayonnaise until smooth.
- Add the lemon juice and finely chopped garlic.
- Season with salt, black pepper and, if desired, a pinch of cayenne pepper for some extra spice.
- Stir everything well and let it sit in the fridge for at least an hour to let the flavors blend.
Variation tips:
- Add some finely chopped fresh herbs such as chives or parsley for a fresh touch.
- For a thinner sauce, you can add some milk or cream to adjust the consistency to your liking.
Sauce 2: Spicy Honey-Mustard Sauce
Ingredients:
- 100 ml honey
- 100 ml Dijon mustard
- 2 tablespoons apple cider vinegar
- 1 teaspoon smoked paprika powder
- Salt and black pepper to taste
Preparation method:
- In a bowl, mix the honey and Dijon mustard.
- Add the apple cider vinegar and smoked paprika for a smoky flavor.
- Season with salt and black pepper.
- Stir everything well until a homogeneous sauce is obtained.
Variation tips:
- For extra heat, add a few drops of hot sauce or some finely chopped jalapeño.
- Mix in some finely grated ginger for a spicy, aromatic twist.
