Ingredients:
- 250g flour
- 220g unsalted butter
- 100g caster sugar
- 100g white caster sugar
- 1 lemon zest and juice
- 4 eggs (L)
- 1 tsp baking powder
- pinch of salt
Glaze:
- 2 tbsp lemon juice
- 100g icing sugar
- Lemon for the zest
Supplies:
- Barbecue with lid
- Cast iron cake pan
- Thermapen
- Mixing bowl
- Hand mixer with whisks
- Spatula
- Zester
- Baking paper
Preparation method:
- Light the barbecue and heat it to approximately 180°C and set it up for indirect cooking.
- Cut the butter into smaller pieces.
- Mix the sugar, butter, salt, lemon juice and zest in the mixing bowl with a hand mixer until creamy.
- Mix the eggs into the batter, one at a time. Make sure each egg is fully incorporated before adding the next.
- Now fold in the flour and baking powder with a spatula. Divide the mixture into 3-4 batches, keeping the mixture light and airy.
- Line the base with baking paper. Grease the cast-iron pan with butter if necessary.
- Pour the batter into the tin and spread it evenly.
- Bake the cake for approx. 45-60 min.
- Check with the Thermapen (or a skewer) that no dough sticks. (Yes, then wait a few minutes longer.)
- Mix the lemon juice with the powdered sugar. The mixture should be thick but just pourable.
- Spread it over the cake (when it is out of the tin)
- Grate some more lemon zest over the glaze.
