Recept: Kermiswafels

Waffles are part of history, just like the Dutch Oven.

They were already baked in the Middle Ages with irons in the fire. The expression "you have to watch your step" comes from this. When the irons were hot, the waffles had to be cooked for a certain number of seconds on each side. They didn't have kitchen timers, so if you lost count, the waffles were burnt. Waffles are found all over the world in all sorts of shapes and flavors. To name a few: German waffles, Liège waffles, or Brussels waffles, and in the Netherlands, the "kermiswafels."

Traditional Dutch kermis waffles were already being baked in the Middle Ages. The recipe below is as close to the original as possible.

Ingredients:

  • 250 g flour
  • 2 eggs
  • 100 g melted butter
  • 1 sachet of baking powder
  • 2 dl lukewarm milk
  • 2 dl water
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ginger powder

Method:

  1. Sift the flour into a bowl. Add the salt, cinnamon, ginger, and baking powder and mix well.
  2. Add the eggs, milk, and water to the flour mixture, stirring until smooth. Then stir in the melted butter and let it rest for ½ hour.
  3. Before baking, make sure your iron is nice and hot.
  4. Grease your waffle iron with butter and let it come to temperature. Stir the batter and fill the waffle iron.
  5. Bake your waffle for 3 minutes per side until golden brown.

Serve these with powdered sugar and butter.

Tip : grate an apple into the batter.
