Filled Pancake
Crispy outside, creamy inside — straight from the fire. Perfect as a snack or a surprising outdoor lunch.
How to prepare the batter:
Mix flour and salt in a bowl.
Whisk the eggs into the milk, gradually pour into the flour, and mix until a smooth batter is formed.
Let it rest for 10 minutes. (Meanwhile, you can prepare your filling.)
Filling (for 2 pancakes):
4 tbsp grated aged cheese
2 tbsp cream cheese (chives or plain)
½ apple, diced small (Jonagold or Elstar)
Pinch of black pepper
(optional: a little honey or thyme for an extra twist)
Mix everything in a small bowl — make sure it remains spreadable.
Preparation in The Windmill Toaster Iron:
Preheat the iron well in the fire or on the BBQ. Lightly grease with oil or butter.
Pour a small amount of batter into both halves of the iron – just enough to cover the bottom.
Let it set for 30 seconds to 1 minute with the iron open.
Spoon the filling onto one half in the middle (about 1 to 2 tablespoons).
Pour a little extra batter over it so that the filling is nicely "enclosed".
Close the iron and flip it over the fire or BBQ.
Cook for 3–5 minutes per side, depending on your fire. Carefully check in between to see if it's nicely browned.
Remove, let cool briefly & serve — with syrup, honey, or plain 😋
Tip: Don't use a filling that's too wet — otherwise the inside will be soggy.
Think: cheese, apple, nuts, bacon, cream cheese, herbs... keep it gooey, not soupy.
