Recept: Dutch Oven spareribs

INGREDIENTS
(for 4 persons)
3 strings of spare ribs
oil
2 onions
1 red bell pepper
1 bunch of parsley
1 bottle of dark beer
2 tbsp barbecue rub of your choice
barbecue sauce, optional

PREPARATION
Cut the spareribs into individual pieces. Finely chop the onion, the bell pepper, and the parsley.

Hang the Dutch oven close to a wood fire and add a dash of oil to the pan. Fry the spareribs.
until lightly browned. Then add the onion and bell pepper, followed by the beer, barbecue spices, and parsley. Mix well.

Raise the Dutch oven slightly and let the ribs simmer with the lid on. Check occasionally to see if there's enough liquid in the pan; add a little more beer or water if necessary. The ribs are done when the meat pulls back slightly from the bone and comes away easily. This takes about 1.5-2 hours.

You can eat the spareribs as is, but it's also delicious to brush them with some barbecue sauce. Grill them briefly over the flame until the sauce begins to caramelize.
