Boyke about his recipe:
The beauty of this recipe? It's simple, yet impressive. You don't have to be a chef to create something spectacular. With a few cans of peaches, some good butter, and some basic dough, you can make a dessert your friends will be asking for. The crust is crispy and buttery, the filling full of flavor, spicy, and fruity—all from your own oven!
Preparation method
1. Drain one whole can of peaches, and add half of the second can, along with the syrup, to a pan with the butter. Melt this over medium heat. Then add the sugar, Add The Windmill Sweet Cinnamon Dessert Mix , nutmeg, and vanilla. Bring to a boil.
Make a slurry of flour and 3 tablespoons of the hot syrup from the pan, stir until smooth, and pour it back into the pan. Simmer gently for 30-40 minutes, or until the syrup thickens and coats your spoon. Let it cool.
2. Combine the flour, sugar, and salt. Add the butter and cut into coarse crumbs. Gradually add the ice-cold water until the dough comes together. Divide into two balls, wrap in cling film, and refrigerate for 35-45 minutes.
3. Preheat the oven to 190°C. Roll out a ball of dough and line it The Windmill Oven Dish . Scoop the peaches onto the dish with a slotted spoon and pour the syrup over it (at least 2/3 of the way).
Roll out the second dough for the top. Make a lattice, or cover completely. Brush with some of the beaten dough (lightly grease) and sprinkle with some Sweet Cinnamon Dessert Mix Bake for 40-45 minutes until golden brown. Let cool slightly before serving.
Serve warm with a generous scoop of vanilla ice cream or a dollop of whipped cream. Enjoy!
