Ingredients
- 6 slices of (white) bread
- 3 half slices of pre-sliced cheese
- 150g smoked chicken strips
- ¾ Red bell pepper
- 1 mini can of corn, drained and rinsed
- 3 tablespoons of your favorite barbecue sauce
- Margarine (no butter because it burns)
Additional required:
- Sandwich iron
- Bowl to mix the ingredients
Preparation method
- Preheat the sandwich iron over briquettes or a small fire.
- Finely dice the bell pepper. Mix the corn, bell pepper cubes, and chicken strips together, and add the barbecue sauce. Stir to combine.
- Butter one side of one slice of bread. Place the buttered side in the sandwich maker. Top the sandwich with the chicken mixture, add half a slice of cheese, and finish with the second slice of bread.
- Spread the top of the sandwich with butter and close the sandwich maker. Repeat for the second and third sandwich.
