As a chef, I've been involved with food and cooking for almost my entire life. When the Liniebreed Ondernemen (Line Breed Entrepreneurship) partnership was founded, I visited various forts. I became interested in the history of the Dutch Waterline and how people lived in the forts. The enormous cast-iron cauldrons and fireplaces I encountered filled me with awe and made me curious about what it would be like to cook so purely, using wood and coal and traditional ingredients.
I soon purchased my first (slightly smaller) Dutch oven. Many more pans followed. I discovered the versatility of cast iron, added my knowledge of classic French cuisine, adapted recipes, and created my own.
The charm of cooking with cast iron, besides the ambiance of outdoor cooking, is its versatility. Because of the heat transfer through the cast iron, you can cook, stew, bake, roast, braise, fry—you name it.
I was one of the first in the Netherlands to start catering with my Dutch ovens. People always find this a special experience.
I'm thrilled that cast iron is back in popularity in the Netherlands. I'm happy to use my enthusiasm and passion to introduce more people to this Dutch product. The demonstrations and workshops I give are always a joy.
