Recipe: Waffles with Caramel Apples
Ingredients:

for the waffles:
500 g waffle mix
250 g butter
4 eggs
whipped cream
for the caramel apples:
4 apples
100 g sugar
50 g butter
200 ml cream
1 tsp. ground ginger
1 tsp. ground cinnamon

Dutch Oven (DO)

Preparation
Peel the apples and cut them into small wedges. Prepare the waffle mix according to the package instructions. Separate the eggs, beat the egg whites until stiff. Melt the butter and mix in the egg yolks and the waffle mix. Then fold the beaten egg whites into the batter. Let the batter rest for 1 hour.
For the caramel apples, put a small layer of water into a Dutch Oven and add the sugar. The water ensures that the sugar melts evenly and doesn’t burn. Let the mixture boil and thicken. The water will evaporate and the sugar becomes syrupy. When it starts to turn caramel brown, add the butter. Keep stirring well.
Then add the cream and spices. Be careful: the sugar mixture is very hot and when you add cold cream, it will bubble up and splatter. Keep that in mind.
Add the apple wedges and let them simmer until the apples are warm and soft. Now it’s time to make the waffles. Make sure you have a heat source. We often use our Camp Stove and fire it up with coals or briquettes. A barbecue works as well.
Your waffle iron works best if it is well seasoned. If you have a brand-new one, grease it with our conditioner before baking. It’s better not to use butter, as it burns. Pour the batter into the waffle iron and bake for 4 to 5 minutes per side. Keep in mind that the batter will expand, so don’t overfill the iron.
When the waffles are ready, top them with the caramel apples. Delicious with a generous dollop of whipped cream!
